Ingredients:
Lemons 20
Rock salt 100gms
Turmeric 1 teaspoon
Methi 2 tsp
Mirchi powder 100gms
Sesame oil 200gms
Mustard 1 tsp
Hing 5gms
Preparation:
Choose thin skinned yellow lemons as they are juicy. Wash and dry them with a clean cloth. Keep aside 5 lemons, cut the rest into eight pieces each. Squeeze the juice of the 5 lemons and cut them also into pieces.Put all the lemon pieces into a plastic tub. Add 100gms of rock salt, one tsp turmeric, mix well and cover and store for 3 to 4 days. On the 4th day, fry 2 tsp of methi seeds to a dark brown color and grind to a fine powder.By now the lemons would have softened and oozed out juice with the touch of salt. To this, add methi powder, 100 gms of mirchi powder( choose a red color spicy variety) and mix well. Heat 200gms of Sesame oil in a kadai and splutter one tsp of mustard seeds. Shut the gas and add 5gms of hing to the oil. After the oil cools down, pour on the lemon mix, mix well and store in a dry jar. Do not touch with a wet hand or spoon to keep fresh through the year.
